What changes were proposed in this pull request?

• Testcontainers 1.21.4 → 2.0.5: artifacts renamed to testcontainers-*, MySQL and PostgreSQL containers moved to their 2.x packages, docker-java 3.4.2 → 3.7.1. The unused testcontainers-junit-jupiter alias goes away.
• Doris compose: withLocalCompose(true) is gone in 2.x; the constructor Doris uses already runs the local docker compose, so behavior is unchanged.
• The MySQL wrapper keeps setting its own configuration override, since the 2.x module no longer ships a default my.cnf.
• commons-lang3: 2.x brings 3.18 onto the test classpath, so the test code moves off the methods 3.18 deprecates. The catalog stays at 3.14.0 for main code; raising it is a separate change, because main code still uses methods 3.18 deprecates.
• Not covered: the trino-connector modules. Their tests run in Trino's own trino-testing harness, which brings Testcontainers 1.x of its own.

Why are the changes needed?

1.21 is the last 1.x line. Moving now lets the framework PRs that follow target the 2.x API once instead of migrating it later. It merges on main on its own.

Does this PR introduce any user-facing change?

No. Test dependencies and test code only.

How was this patch tested?

./gradlew test -PskipITs (with the JUnit 6 PR below it: 0 failures). Docker ITs at the top of the stack, which carries this upgrade: MySQL, PostgreSQL, Hive, S3 (LocalStack), Kafka, ClickHouse, OceanBase and Trino connector ITs pass, apart from known failures that also fail on main.
