DOC-1349 Fix links by adding redirects

Resolves https://redpandadata.atlassian.net/browse/DOC-1349

I've also added extra redirects that were found after implementing redpanda-data/docs-extensions-and-macros#103

With the new CLI version of the K8s automations, we can convert hard-coded docs links (that don't get checked) into xrefs so we get link checking out of the box.
