This recipe will be enough to make 4 pizzas but one can cut the dough in how many pieces you like. | ||
|
||
### Poolish: | ||
- 24g of baker's yeast (like [this](https://www.coop.ch/en/food/pantry/baking-ingredients/classic-baking-ingredients/baking-staples/naturaplan-bio-hefewuerfel/p/6524663?context=search)) | ||
- 200g of water | ||
- 5g of Honey (Creamy honey) | ||
- 200g of white flour | ||
|
||
**Directions for the poolish:** | ||
|
||
1. Mix the yeast with the water and the honey. | ||
2. Add in the flour. | ||
3. Let it sit, sealed for 1 hour at room temperature. (Make sure the recipient is big enough cause it will grow) | ||
4. Let it sit, in the fridge for a maximum of 24 hour or at room temperature for a maximum 12 hours. (I leave it at room temperature overnight) | ||
|
||
### Dough: | ||
- Poolish | ||
- 500g of flour | ||
- 300g of water | ||
- 20g of salt | ||
- Bits of olive oil | ||
|
||
**Directions:** | ||
|
||
1. Mix the salt with water. | ||
2. Pour the flour on the poolish. | ||
3. Mix with your hands and add in slowly the water. | ||
4. Workout the dough with your hands, beat it on the counter, stretch it, make it work. | ||
5. Once you see no more bits of flour and all is mixed up form a ball. | ||
6. Pour a small amount of olive oil on your hands and rub the dough with it to create a thin layer of oil over the dough. | ||
7. Let it sit like this at room temperature for 15 minutes. | ||
8. Once time has passed gently form a ball with the dough and cover it again with a small layer of olive oil. | ||
9. Cover it with a wet towel and leave it for an hour. | ||
10. Cut the dough in how many pieces you like and put it in a big recipient, cover the recipient with plastic wrap. | ||
11. Let it sit for at least 2 hours before cooking. | ||

||
## Cooking: | ||
|
||
- For bread, take one of your ball and cooki up at 250 degrees celsius until the exterior gets brown. Usually for bread the oven must be at higher temperature and use wood but an electrical oven works too. | ||
- For pizza you should prepare the dough by pressing in the middle and stretching the dough to the sides, don't use a roll to flatten out the pizza you don't want that you want the air to go to the sides, once stretched and toppings are added cook it at 250 degrees celsius until your pizza looks done usually 15 minutes. | ||

Cette recette sera suffisante pour faire 4 pizzas mais on peut diviser la pâte en autant de morceaux que l’on souhaite | ||
|
||
### Poolish: | ||
- 24g de levure de boulanger (comme celle-ci) | ||
- 200g d’eau | ||
- 5g de Miel (Miel crémeux) | ||
- 200g de farine blanche | ||
|
||
**Instructions pour la poolish:** | ||
|
||
1. Mélangez la levure avec l’eau et le miel. | ||
2. Ajoutez la farine. | ||
3. Laissez reposer, scellé pendant 1 heure à température ambiante. (Assurez-vous que le récipient est assez grand car il va grandir) | ||
4. Laissez reposer, au réfrigérateur pendant un maximum de 24 heures ou à température ambiante pendant un maximum de 12 heures. (Je le laisse à température ambiante pendant la nuit) | ||
|
||
### Pâte: | ||
- Poolish | ||
- 500g de farine | ||
- 300g d’eau | ||
- 20g de sel | ||
- Un peu d’huile d’olive | ||
|
||
**Instructions:** | ||
|
||
1. Mélangez le sel avec l’eau. | ||
2. Versez la farine sur la poolish. | ||
3. Mélangez avec vos mains et ajoutez lentement l’eau. | ||
4. Travaillez la pâte avec vos mains, battez-la sur le comptoir, étirez-la, faites-la travailler. | ||
5. Une fois que vous ne voyez plus de morceaux de farine et que tout est mélangé, formez une boule. | ||
6. Versez une petite quantité d’huile d’olive sur vos mains et frottez la pâte avec pour créer une fine couche d’huile sur la pâte. | ||
7. Laissez reposer ainsi à température ambiante pendant 15 minutes. | ||
8. Une fois le temps écoulé, formez doucement une boule avec la pâte et recouvrez-la à nouveau d’une fine couche d’huile d’olive. | ||
9. Couvrez-la d’un torchon humide et laissez-la pendant une heure. | ||
10. Coupez la pâte en autant de morceaux que vous le souhaitez et mettez-la dans un grand récipient, couvrez le récipient de film plastique. | ||
11. Laissez reposer pendant au moins 2 heures avant de cuisiner | ||

||
## Cuisson: | ||
|
||
- Pour le pain, prenez une de vos boules et faites cuire à 250 degrés celsius jusqu’à ce que l’extérieur brunisse. Habituellement pour le pain le four doit être à une température plus élevée et utiliser du bois mais un four électrique fonctionne aussi. | ||
- Pour la pizza, vous devriez préparer la pâte en appuyant au milieu et en étirant la pâte vers les côtés, n’utilisez pas un rouleau pour aplatir la pizza, vous ne voulez pas ça, vous voulez que l’air aille vers les côtés, une fois étirée et les garnitures ajoutées, faites cuire à 250 degrés celsius jusqu’à ce que votre pizza semble cuite, généralement 15 minutes. | ||
