Remove upper bound for numpy and pillow

Following the discussion in #1164 this pull request removes the upper bound for numpy <2.3 and pillow <11.2.1.

The same changes as in #1175 - but now ParmEd 4.3.1 was released last week https://github.com/ParmEd/ParmEd/releases/tag/4.3.1

• Bump version to 4.3.1 and update dependencies conda-forge/parmed-feedstock#48
• Update to 2.1.2 conda-forge/moviepy-feedstock#23
