This PR only adds protocols that are already usable and have at least a published crate.
Criterium: - repo defines a separate ALPN - there is a ProtocolHandler impl somewhere (not necessarily public) - *or* there is a cli or at least tests

If we could fix that it would be nice to add the experimental protocols, maybe in a different section. This would be not for people to just grab and use, but as a starting point / inspiration.
