Use gcc 11 as default gcc version to support more distributions, as gcc 12 is not shipped with most distros by default.

@laverdet i just noticed this got merged, but when looking a bit closer at the file, i doubt this will actually fix it.

The fix should probably be in the Dockerfile.debian, where gcc is installed. What do you think?

See #509. But we should try it out first, it's not tested yet.
