Restructure portfolio

Description

This PR restructures my portfolio to make the URLs less cumbersome. To make the URLs shorter, I streamlined the path from https://josh-wong.github.io/portfolio/personal/<PROJECT_NAME> to https://josh-wong.github.io/<PROJECT_NAME>.

• Restructured my portfolio to use the project name as the base URL.
• Removed unnecessary docs since updated docs were added in the restructured docs/ folder in the following PRs:
  • AUTO: Docs sync - baird-beer-quadrants #82
  • AUTO: Docs sync - passgen #83
  • AUTO: Docs sync - zune-software-setup #84
  • AUTO: Docs sync - bitcoin-cash-node-on-raspberry-pi #85
