Adds status_updated_at timestamp to the eSIM schema and updates typings/build; version bumped to 2.3.1.

• Specs/Schema:
  • Add status_updated_at: timestampNullable to esimSchemaSpec (src/specs/esim.ts).
• Types/Clients:
  • Update generated types to include status_updated_at (Date) in eSIM models (dist/index.d.ts, .d.cts).
• Build Artifacts:
  • Regenerate compiled files and source maps reflecting the new field (dist/*).
• Version:
  • Bump package version to 2.3.1 in package.json.
