[META] Discover redesign

For the upcoming Discover redesign, this issue is here to identify dependencies on EUI, it's currently being updated, so it will grow a bit. This is mostly about tasks targeting EuiDataGrid, here's a figma screenshot how it should look like:

Hi @JasonStoltz thanks for the heads up, I think we did what we could, I'm adding the both remaining issues to our team's agenda to discuss

We discussed and came to an agreement that this issue can be closed

  Are nice to haves but not mandatory for our Redesign
