This PR enhances the accessibility of the Start Case screen in the Sanctum app. It adds appropriate ARIA-equivalent props (accessibilityRole, accessibilityLabel, accessibilityState) to the case type selection buttons, text inputs, and the submit button. It also adds a visual indicator for the required "Co-parent name" field.
These changes are minimal (< 50 lines) and follow React Native accessibility best practices.
