Updates the pipelines stage docs to use a 3-line example and correct expected output, and normalizes the Notes list formatting.

• Documentation:
  • Update example pipeline in stage_descriptions/pipelines-03-xk3.md to head -n 3 with corresponding wc output (3 3 10).
  • Normalize the "Notes" section into proper markdown bullet list.
