Unable to get values other than "current conditions"

For example, the mintempC value is listed in the json under weather. Is there a way to get this value, please?

On the bar itself. Like all the other data you can fetch from "current conditions", such as pressure, FeelsLikeC, wind, etc.

More precisely, this command:
"exec": "wttrbar --nerd --custom-indicator "{areaName}: {FeelsLikeC}°C, {maxtemp_C}°C-{mintemp_C}°C, {pressure} hPa, {windspeedKmph} km/h, {weatherDesc}"",

Returns only the string for {maxtemp_C}°C-{mintemp_C}°C. The other indicators work fine.

Like the README says:

--custom-indicator STRING - optional expression that will be shown instead of main indicator. current_conditions and nearest_area keys surrounded by {} can be used. For example, "{ICON} {FeelsLikeC} ({areaName})" will be transformed to "text":"🌧️ -4 (Amsterdam)" in the output

Your keys aren't part of the current_conditions or nearest_area objects.
