When exploring the grafana dashboards using the workshop instructions here https://catalog.workshops.aws/modernengg/en-US/20-platformengineering/21-section1-platformengineering/006-section1-grafana#step-2:-explore-your-dashboards

I was only able to see in the cluster dropdown/selector modernengg-dev was not able to see the hub cluster or the prod cluster

Currently Observability accelerator is used which is setup to work only for Prod and Dev cluster. Hub does not have observability. We should add this as enhancement. I dont know why Prod does not work for you. Can you create an another TE to double check if Prod is working. HUB should be an enahcnement.
