chore(ci): upgrade gh macos runner to latest

Description of changes

• On v5-stable branch, run CI on macos-latest. This requires upgrading RN E2E apps to detox@20 see Issue 1044 #1051
  • Upgrade to iPhone simulator 15
• Enable integ_rn_ios_datastore_sqlite_adapter RN E2E test
