Upgraded all module versions from 25.3-SNAPSHOT to 25.5-SNAPSHOT across the project. Additionally, updated sidebar dependencies to version 25.3 where applicable and added new modules such as `server_platform_spigot_v1_21_R2`.
Introduce a new platform implementation for Spigot v1_21_R2, including version-specific methods and dependency updates. Added a quality control checklist (TEST_LIST.md) for ensuring proper functionality of the new version support.
