chore: update to next major version manually

Changes

• Updates to 2.0.0. and bumps the vscode engine version to 1.63.0 and the vsce dependency to 2.15.0
• We also need to consider if we switch back the identifier for the extension. Currently we’re publishing against “Accord Project (Concerto), however there’s an older (but more popular!) one called “Accord Project” which includes the old template features too. I have not made this change in this PR.
