Add platform support for visionOS, macOS, watchOS, tvOS
♻️ Current situation & Problem
This PR declares explicit platform support for visionOS, macOS, watchOS and tvOS and adds respective testing pipelines.
Further, we remove the UITests project as this is not applicable to this project.
