Entries are now saved as NDJSON to a text file that in a pair_logs folder, which will create subdirectories based on the defi network: ETH, SOL, etc. Furthermore, I created a pair-reader python file to be able to read from the created pair-listener logs which is what we are going to use directly with the web api to extract the information the user is looking for. The write/reads use a locking mechanism to avoid race conditions. and the pair_logs has been added to the .gitignore
