Closes #1228
Summary
Hardened the AI extraction flow so /api/extract no longer accepts unbounded text input. The endpoint now validates payload size and content before invoking Gemini, preventing oversized prompts from exhausting quota, causing timeouts, or failing silently.
Changes Made
Added request-body protection and extraction text validation in server.js and server.js.
Introduced a reusable validator in backend/utils/extractValidation.js to reject empty and oversized inputs with clear HTTP responses.
Added regression coverage in tests/extractValidation.test.js to confirm normal input is accepted and oversized input is rejected cleanly.
