New Version Policy

This PR accompanies a change to our version support policy:

Our version support policy is to support the latest version and the preceding "Major Update", and maintain all "Game Drops" in-between. If there is a hotfix for a game drop, we will remove support for the initial game drop and only support the hotfix version. If a breaking issue arises with an in-between version, we will likely drop support rather than fix it. This revised support policy better reflects the realities of Mojang's and Server Owner's update schedules.
