[Bug Report][3.7.4] item-title mutate value and vmodel

Environment

Vuetify Version: 3.7.4
Vue Version: 3.5.12
Browsers: Chrome 130.0.0.0
OS: Mac OS 10.15.7

Steps to reproduce

Use a v-select with a simple array
use the prop of item-title and pass it a function to update the display value

Expected Behavior

When modelValue updates it should reflect the value of what you see in items

Actual Behavior

When modelValue updates it does not reflect the value of the what you see in items, but reflects the custom title
