Documentation adjustment to v2

The documentation on the wiki should be updated to include:

• installation steps for new v2 dockerized setup
• Explanation of install-elkserver.sh parameters
• How to use custom logstash filters
• include the option for deployment for ansible. This is just a reference to external ansible scripts
• Updated list on the field names and types (now still includes the old names)
• Detailed explanation of alarms and config.json parameters
• how to build an alarm / notification connector

@fastlorenzo you are better entitled to document on custom alarms and notification connectors. I've done a significant push on the other items, still some to do on the field names. But we're getting there.
