Reformat values.yaml comments from readme-generator to helm-docs format #100
Description
Background
As part of migrating away from Bitnami dependencies, we need to update the comment format in our values.yaml files. Currently, they use Bitnami's readme-generator format, but we should migrate to the more widely adopted helm-docs tool. Once completed, the relevant GitHub actions, scripts, and documentation should be updated.
