Update 8-hybrid-search lab to use the new $rankFusion stage

As a part of the 8.1 marketing release on 6/25, we are releasing $rankFusion for hybrid search use cases (draft docs). We should update this lab to use the new stage as most public references to hybrid search, including the vector search docs, will use it cc @nestor-daza-mdb
