Update screenshots in EDGE documentation #173

Update the screenshots in the EDGE documentation to be the most recent screens and also from a user login perspective (not the admin view).

See #146 for reference.

FYI: I recently started using a screenshot program for macOS called Shottr, which I've been very happy with. It can be used for free forever, but I ended up paying for it because I thought I would use some pro-only features (narrator: he didn't).

Here is an example screenshot I took just now using Shottr, with one of its built-in fancy backgrounds:
