When uploading a file, I'm getting:

and the API responds with:

I have seen it work with some files but not others.

What could be the cause of this? I don't know what to try to fix this.

It seems that your request was aborted due to reaching the Read timeout.
(Note that "read" here is from the server's perspective.)
According to your log, the server accepted the request at 10:50:38, and then failed with "i/o timeout" at 10:50:54.
It took 16 seconds. The default Read timeout is set to 15 seconds, so this is likely the cause.
Please try to set a longer read timeout (-read_timeout). If you are using reverse proxies like as nginx, check the configuration of them. They have similar configuration.
