macOS: ApplePressAndHoldEnabled forcibly turned on, without an option to turn it off if undesirable

In https://github.com/libsdl-org/SDL/issues/3622 (https://github.com/libsdl-org/SDL/commit/caf0348b26d02bc22ba9a0a908c83c43f8e4e6ad) SDL will enable ApplePressAndHoldEnabled in app defaults without providing option to turn it off if not desired (such as when typing into a custom rendered textbox etc.). Perhaps this could be controlled through SDL_HINT_MAC_xxx?
