Documentation outdated: Sphinx

The repo has a docs folder which seem to contain some kind of sphinx documentation. The Makefile in this directory doesn't work.

❯ make help
/bin/sh: sphinx-build: command not found
make: *** [help] Error 127

and in general it looks like the documentation was never touched after #142

At the same time, the README file in the main directory seem to have all the required information.

Could we remove the docs folder to avoid confusion? (If so, I'm happy to send a PR)
