Move the Leaderboard page to a MongoDB backend #117

Is your feature request related to a problem? Please describe.
Right now the leaderboard page is tied to DyanmoDB / AWS, which I'd like to change. Moving this to AWS will allow for easier development in the future.
Before you set this up talk to me about setting up the Mongo collection (the cluster / database is already setup) and giving you the correct .env file
