Create phase-two demo script and seeded showcase dataset

Description

By Phase 2, the team should be able to demo multiple capsule scenarios consistently.

Scope

• Expand seeding to cover text-only, attachment, gift, locked, unlocked, and failed-delivery scenarios
• Document demo flows for presenters
• Add admin visibility pointers
• Review key files: seed scripts, README/demo docs

Acceptance Criteria

• Demo dataset can be created in one command
• At least five showcase scenarios are documented
• Data aligns with live UI/API expectations
