Add DIJET dataset configuration for pythia6.428-dijet-v1.0 (#17)

Added DIJET dataset configuration to SIDIS campaign including:
- New SIDIS/DIJET/ directory with CSV file for pythia6.428-dijet-v1.0
- Updated config.yml to include DIJET dataset in both nevents and timings workflows
- Dataset covers ep collisions at 18x275 beam energy with q2 range 1-20000
