[PBI] Evaluate re-enablement of containerize github workflow

Description

The containerize workflow has not been enabled since this project was introduced in Eclipse. However, since it was created, the names of the Dockerfiles have changed. Evaluate if this github workflow should be re-enabled, and if so, change the Dockerfile names listed here: .github/workflows/containerize.yaml.
