add problem jsonld examples to geocodes_demo_datasets

We need to add examples to the demo datasets so that we can better catch and check for issues without loading entire dataset
[ ] wifire examples (at least 3)
[ ] geochemitry example (ones that have issue, and generated
[ ] ecoforecast (3 stac catalog examples)

there are depth records in the depth dataset, examples need to be migrated to the demo datasets.
