This is primarily a follow on to #551. As we gather more information on deployment sizing we should provide suggested configurations to handle aspects like resourcing and HA based on cluster scope and workloads.

Documentation with recommended overrides based on scale of my environment.
uds-config.yaml examples with overrides of the above
CI testing based on ^ (maybe small is used for demo bundle, medium for nightly testing, large for internal environment)?
Additional context
One discussion during the previous ticket was evaluation of a way to standardize the interface between core and the end user for some common overrides like resources/HA. By shifting some of these configurations into zarf helm overrides, published as part of core, we could effectively publish true example configs that would work regardless of bundle construction.
