Document ability to exclude metadata items from being converted to/from headers #4701

What content needs to be created or modified?
Update apache-kafka component reference to document new headerFromToMetadataExcludedKeysRegex option. It provides the ability to exclude metadata items from being added as headers when publishing, and similarly from being converted from headers to metadata when consuming messages.
Forwarding certain metadata as headers has some unwanted downstream side effects.

Add reference and provide a section explaining why it is needed.
