Redo edit media source UI

It's all quite messy, do the following:

1. Use a separate page instead of a modal
2. Consolidate editing libraries and media source settings onto a single page
3. Mention that sensitive info is not returned from the UI and that is why it is empty after save
4. Potentially convert to tanstack form because the logic on hook form stinks right now
