Measure the cycles and time to generate proof for celestia-prover programs

Context

We added hollowed out programs for celestia-prover in https://github.com/celestiaorg/celestia-zkevm-ibc-demo. The hollowed out programs should be faster to prove than the real programs from upstream.

Problem

There is no data on the cycle difference or time to generate proofs for the real programs and the hollowed out programs.

Proposal

Add a table to the celestia-prover README that includes data for:
