* docs: update all docs and examples for 1.0.0 release Update Docker image tags from 1.0.0-rc1 to 1.0.0 and Lambda layer version from 26 to 27 across README, docs, all example Dockerfiles, READMEs, SAM templates, and CI workflow. * docs: update changelog for v1.0.0 GA and add v1.0.0-rc1 section
