Allow use of other LLM providers in addition to Anthropic

Expand configuration options in the new Models config section with a provider selection.

Could either be an new select before model selection, or prefix model options with LLM provider and adding new options.

Another option to investigate is supporting OpenRouter API key and delegate model selection to OpenRouter.
