Right now sites use the first image on each page.

Github, for example, has the setting here: https://github.com/alex-shpak/hugo-book/settings

Test with:

LinkedIn post/image inspector: https://www.linkedin.com/post-inspector/inspect/

Twitter inspector: https://cards-dev.twitter.com/validator

Facebook preview: https://developers.facebook.com/tools/debug/ - requires login.
