EoI_Process: Code Validation & Flexbility

Summary

The EoI Processing code was written as an R notebook to make help it easier for R beginners and encourage interaction with the code, checking processes and outputs along the way - more flexibility and less hard coding would help it be more adaptable to different inputs and use-cases.

Some specifics:

• Bug Batch 10 onwards is not working with current code because the format of the EoI has changed. Probably small changes are needed, but I did not have time to look into it
• Enhancement EoI_Process/3_EoI_Plot.Rmd could be made more similar to EoI_Process/2_EoI_Process.Rmd i.e. shorter with more sub-functions.
