Add Swift SDK

When this does get picked up, I would just like to note that non-UI portion of the Kotlin SDK could be reused in this implementation as well to save time & effort.

I’ve been researching a pure Swift / SwiftPM AG-UI client and came across this issue. Since it’s now on the roadmap, I’d like to take ownership of it and begin work on the Swift SPM based AG-UI client SDK.
