Library versions for docs

• Library requirements for the docs currently don't have versions attached. This should be fixed at some point, probably for putting the docs on a server.
• Jorinde came across a requirements error when making the docs discussed in PR Docs update #237 . This was fixed locally by upgrading pip and setuptools, but should be fixed by updating docs requirements (or similar) on the repo.
