TASK: Add `change_name()` method

TODO:

• Add the change_name() method to the Profile dataclass in person.py (with type checks and stuff)
• Remember to add type hints and docstrings where necessary and follow PEP 8

PR steps:

3. Create a new branch and name it feature/change-name-method
4. Push commits to your remote fork
5. Create a PR titled TASK: Add `change_name()` method (#134)
6. At the end of the PR description, add Closes #134
