Custom theme

I'm trying to add a custom look and feel to my Stirling deployment but its doesn't seem to be taking effect.

I've edited the static and template file and copied the edited filed and folders to the customFiles directory in my docker container maintaining the structure of static and templates - but only the static files have been picked up, nothing theme related has changed.

Have I missed something?
