request: use `deltakit-stim` in documentation examples

Motivation

The following documentation pages are using the cloud functionality of deltakit to simulate leakage:

• https://deltakit-docs.riverlane.com/en/stable/examples/notebooks/simulation/leakage-aware_decoding.html
• https://deltakit-docs.riverlane.com/en/stable/examples/notebooks/simulation/leakage_demo.html

With deltakit-stim now open, we should change these to use deltakit-stim instead.

Proposed solution

Change the notebooks to use deltakit-stim. The cloud accesses will still be needed for LCD decoder, but not for leakage annotation and simulation any more.
