Based on what you wrote in Readme:

Operational costs include execution of daily calls to deployed contracts functions that help keep the exchange afloat, such as calls to underlying price feeds "pre-fetch" functions and to option token contracts "destroy" function.

Instead of doing all these things manually, I suggest using a tool/service like Keep3r which automates/decentralizes the maintenance tasks: https://keep3r.network/

Keep3r was created by @andrecronje and many important projects use it (Yearn, Sushiswap, Lido etc.)
