Add inline/GUI configuration creation

Currently, when you try to open a file without a valid pre-defined configuration it fails. Ideally, it should give you some kind of 'wizard' that asks questions about what each column in the file is, its units, and then saves the results to a `.json` configuration file in the appropriate config directory.
