Add Matter-over-Thread support

I believe the ESP32C6 should support all of the sensors via Matter over Thread using ESP-Matter. This would be incredible as there are pretty much no Matter-over-Thread temperature sensors on the market at the moment.

I primarily use a Google Nest Hub but I've also got an OTBR based on an ESP32-S3 with an ESP32-H2 coprocessor knocking around and an Apple Homepod Mini.
