Excel metadata template rejects valid `YYYY-MM-DD` date values

The metadata template generated by build-schema rejects values entered in date columns even when they follow the expected YYYY-MM-DD format, for example 2024-02-12.

Excel/LibreOffice shows the validation error:

Formato de fecha incorrecto: Ingrese la fecha en formato correcto YYYY-MM-DD (ejemplo: 2024-02-12).
